This year it definitely feels like easter weekend sneaked up on me with all the madness going on in the world with COVID-19. But it’s in these times that we find solace in the quality time we get to spend with loved ones and “breaking bread” like Barbara Coloroso says.

I’ve compiled a list of all the recipes I think would be perfect to make and share this Easter weekend. Since we’re all stuck at home and we can’t always go and buy ingredients on a whim this list would be a great tool to use when you are planning your next grocery list.

3. Granola Crust Yoghurt Tart
Now, this granola crust may seem like a little too much effort to even bother, but it’s super quick and easy to make. Taking only 30 minutes from start to finish this breakfast granola tart will be the show stopper on the brunch table.
4. Dairy-free Spiced Rooibos Cake
Celebration of warm festive spices and rooibos for a South African flare. This deliciously fluffy and moist cake sponge recipe is derived from a classic milk sponge recipe. However, this version of the recipe I aimed to make dairy-free and refined sugar-free by replacing the milk with a dairy-free alternative, cane sugar with coconut blossom sugar and the butter with ghee or coconut oil.
5. Vegan Orange and Date Cinnamon Buns
Light, sweet and soft pull-apart buns filled with almond butter, Medjool dates, cinnamon and a sprinkle of orange zest.
6. Gluten-free Ma’amoul Cookies
Middle-Eastern holiday cookie filled with dates, pistachios, walnuts or a combination encased in a soft crumble cookie.
7. Vegan, Gluten-free Carrot Cake
Light, sweet, tangy carrot cake that retains its moisture without being all mush and no cake. With added dried pineapple and passion fruit to give it a tropical twist.
